Instructions

In a large bowl, combine all-purpose flour, instant yeast, sugar, and salt. Add warm water and olive oil to the dry ingredients. Mix until a rough dough forms

Transfer the dough to a lightly floured surface and knead for 8-10 minutes until smooth and elastic (or use a mixer). If the dough is sticky, sprinkle with a bit more flour.

Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Heat butter or olive oil in a pan over medium heat. Sauté the finely chopped onion until soft, approximately 3-4 minutes. Add the finely chopped garlic and cook for about 30 seconds until fragrant.

Stir in the spinach and cook until wilted. If using frozen spinach, ensure its thawed, and excess moisture is squeezed out. Season the mixture with salt, black pepper, and a pinch of nutmeg if desired

Allow the mixture to cool slightly. Once cooled, mix in the cream cheese, crumbled feta, and grated mozzarella until well combined.

On a lightly floured surface, roll out the risen dough into a large rectangle, approximately 40x30 cm (16x12 inches). Evenly spread the spinach and cheese filling over the dough, leaving a small border around the edges.

Starting from a long side, roll the dough tightly into a log. Using a sharp knife, cut the roll lengthwise down the middle, exposing the filling. Gently twist the two halves together, keeping the cut sides facing up, to form a braid. Shape the braided dough into a circular crown and pinch the ends together to seal

Place the bread crown onto a baking sheet lined with parchment paper. Brush the surface with olive oil. Generously sprinkle grated Parmesan cheese over the top, pressing it lightly into the dough. If desired, sprinkle sesame seeds over the Parmesan for added texture and flavor

Preheat the oven to 200°C (400°F). Bake the bread crown for 25-30 minutes, or until it achieves a golden-brown color and a crispy texture

Upon removing the bread from the oven, immediately drizzle honey over the top. Sprinkle additional crumbled feta cheese to enhance the flavor. Allow the bread to rest for 5 minutes before serving warm.
