Instructions

In a bowl, whisk together oat flour, protein powder, baking powder, and cinnamon

In a separate bowl, mash the banana and mix with egg, Greek yogurt, vanilla extract, and honey/maple syrup until smooth

Slowly add the dry ingredients into the wet mixture, stirring until you get a thick, smooth batter

Heat a non-stick pan over medium heat. Lightly grease if needed. Pour small circles of batter onto the pan, cooking for 2-3 minutes per side until golden brown

Stack your pancakes, top with fresh berries, and drizzle with your favorite syrup for the perfect finish. Enjoy!
Tips and Substitutions
- Add chia seeds or ground flaxseeds to the batter to increase fiber and omega-3s in the pancakes.
- Use chocolate protein powder and drizzle with melted dark chocolate instead of syrup, to create a dessert-like twist while still being rich in antioxidants from dark chocolate.
- Mix some almond, peanut, or cashew butter with honey + warm water, whisk until smooth drizzle over pancakes.
- Stir extra blueberries into the batter before cooking for juicy bursts in every bite.
